  • Grape varieties: 100% Rolle.
  • Plot exposure: South - South - South - East.
  • Soil: Soil made up of rolled pebbles, mixed with very light sand (pudding) and some clayey veins.
  • Average age of the vines: more than 30 years old, selection of plots.
  • Vinification: 5% Vinified in barrels for 8 months (new French oak). Harvested grain by grain in manual harvesting. Assembling of technique by maceration & direct pressing. Thermo-regulated fermentation after static settling (stabling for 24 to 36 hours).
  • Maturing: Batonnage on fine lees for 2 to 4 months and 5% of the volumes are transferred to oak barrels between 2 and 6 months depending on the age of the barrel.

 

 Organoleptic characteristics of the wine:

 

  • Visual aspect: Deep colour, bright yellow, sparkling...
  • Olfactory aspect: Fine nose, with notes of white flowers.
  • Taste: Elegant and subtle palate, with a very long finish. These are wines that age admirably and can give exceptional bottles with an astonishing length in the mouth.
  • Waxed and numbered bottles.
  • Service temperature: 11°C Cool but not chilled.
  • Shelf life: about 8 years to 10 years depending on the vintage.
  • Food/wine pairing suggestions: Great white food, fish, white meat with white mushroom sauces.

  • Grape varieties: 100% Folle Noire.
  • Exposure parcel: South - South - South - East.
  • Soil: Soil made up of rolled pebbles, mixed with very light sand (pudding) with some clayey veins.
  • Average age of the vines: about 25 years.
  • Vinification: 25 Hl/hectare Hand picked in crates, sorted. Traditional maceration after destemming with a medium to long vatting period (about 6 to 10 days). During this phase we carry out various operations, one of the most incidental of which is the nature of the load shedding, its number, duration..... We then run off, unload, then later racking, fining, blending, maturing in French oak barrels for a minimum of about 12 months.

 

 

Organoleptic characteristics of the wine:

 

 

  • Visual aspect: Light ruby-coloured dresses with elegant amber reflections.
  • Olfactory aspect: Elegant, spicy and fruity wine.
  • Taste: The crazy black wine of this vintage expresses itself with a rare finesse. Structured and complex with very mellow tannins. Its finish is long, pleasant, and very sweet.
  • This manually waxed cuvée is perfect for ageing.
  •  Serving temperature: about 16-18° C.
  • Shelf life: 10 to 15 years.
  • Food and wine pairing suggestions: They are perfect with white meats, some fish and gourmet dishes.

  • Vinification: Harvest 35Hl/ Hectare. Manual harvest in crates, sorted. Assembling of technique by maceration & direct pressing. Temperature-controlled fermentation with static settling (stabling for 24 to 36 hours). A traditional method for making this sparkling wine. He didn't receive any liquor, it's a 0-dose.
  • Maturing: Batonnage on fine lees for 2 to 4 months and 5% of the volumes are transferred to oak barrels between 2 and 6 months depending on the age of the barrel.
